Bean Quinoa Salad

Prep time 10mins
Serves 2

Ingredients

  • 100g cooked quinoa, cooled
  • 150g cooked edamame beans
  • 250g mix of cooked peas, sliced raw sugar snaps,
  • sliced broad beans and sliced French beans
  • salt & pepper for seasoning
  • Dressing
  • 1 clove of garlic, crushed
  • 1 tablespoon white wine vinegar
  • 1 teaspoon maple syrup
  • 3 tablespoons olive oil
  • 2 tablespoons mix chopped fresh herbs: tarragon, chives, basil

Instructions

Mix the quinoa in a large bowl with the beans and peas and season well.
Mix together the dressing ingredients and stir through the salad

Watermelon & Feta Salad

Prep time 10mins
Serves 2

Ingredients

  • 400g watermelon cut into 3-4cm chunks
  • 2 tablespoons marinated red onions
  • 60g feta crumbled
  • 3 tablespoons toasted pumpkins seeds or pistachios
  • 10 black olives
  • 2 tablespoons shredded fresh mint
  • 50g rocket
  • Salt & pepper
  • Extra virgin olive oil to serve

Instructions

Arrange all of the ingredients together on a serving plate. Season well and drizzle with olive oil.
