Bean Quinoa Salad

Serves 2
Ingredients
- 100g cooked quinoa, cooled
- 150g cooked edamame beans
- 250g mix of cooked peas, sliced raw sugar snaps,
- sliced broad beans and sliced French beans
- salt & pepper for seasoning
- Dressing
- 1 clove of garlic, crushed
- 1 tablespoon white wine vinegar
- 1 teaspoon maple syrup
- 3 tablespoons olive oil
- 2 tablespoons mix chopped fresh herbs: tarragon, chives, basil
Instructions
Mix the quinoa in a large bowl with the beans and peas and season well.
Mix together the dressing ingredients and stir through the salad

Watermelon & Feta Salad
Prep time 10mins
Serves 2
Ingredients
- 400g watermelon cut into 3-4cm chunks
- 2 tablespoons marinated red onions
- 60g feta crumbled
- 3 tablespoons toasted pumpkins seeds or pistachios
- 10 black olives
- 2 tablespoons shredded fresh mint
- 50g rocket
- Salt & pepper
- Extra virgin olive oil to serve
Instructions
Arrange all of the ingredients together on a serving plate. Season well and drizzle with olive oil.
